François Rousset-Martin 'Mémé Marie' Côtes du Jura, 2022 botrytis the Provenance Vineyards Merlot 2019This wine is made from equal parts Chardonnay and Savagnin. The Chardonnay is vinified without oxidation, a style called ouill, while the Savagnin is aged for three months sous voile, or under a veil of yeast that allows a controlled rate of oxidation. Although his vineyards are within the Chteau Chalon appellation, famous for its Vin Jaunes, Franois labels his wines Ctes du Jura because he does not produce them in the same oxidative style required
