It is also LIVE certified. The fruit is picked to maintain acidity. It is pressed whole cluster and allowed to settle for 24 hours. Clean juice is then racked to Neutral barrels. Native fermentation goes slow generally taking over 12 months to complete. The lees are not stirred unless a little air is needed because of stalled primary fermentation.
