Wed pair it with some gazpacho and shrimp ceviche. Ppire has vines in a couple of different zones of the cru of Monnires St. Fiacre (including the lieu dit of Gras Moutons which is separately bottled). The site for this bottling features 60 year old vines on fine, sandy, gneiss rich soils. As for all Ppire vines and wines, the farming is organic and the harvest and all work by hand. The fruit is direct
