This limited release showcases Bourbon Aji, a rare varietal prized for its highly expressive aromatics. Cherries are handpicked at peak maturity and depulped the very same day. A careful 24 to 36 hours of aerobic fermentation precedes a slow, shaded drying process on raised beds. The result is a cup of profound
